Carrot Ginger Soup Recipe

This is one of my favorite soups. Especially when I’m sick and I need that extra boost.

It’s very easy to make it.

What you need?

2 onions

2 peppers (I used 1 yellow and 1 red one)

12 big carrots

2 tbs. olive oil

2 pcs. ginger (3cm)

5 garlic cloves

1 tbs. turmeric and/or curry powder

A bit of salt

Don’t worry about how you cut the vegetables- everything will be puréed in the end.

Heat olive oil over medium heat in a big pot and add onions. When the onions have become transparent add peppers. Cook and stir occasionally for a couple of minutes.

Add carrots and cook them until they have let out their juices.

Then, add water so it covers the vegetables or a bit more if you like a more liquid soup.

Reduce the heat so the vegetables simmer lightly and cook for about 20-30 min, until tender.

Add garlic and ginger and purée the soup until completely smooth.

Add turmeric and/or curry powder and stir it.
